Red cabbage and apple soup



This is one of my favourite autumnal recipes. Also known by me as 'coleslaw soup' on account of the red cabbage and apples, it really sums up the harvest season for me.

So, you need:
  • 2 apples - eating apples are best on this occasion
  • Half a red cabbage
  • 1 diced onion
  • 1 vegetable stock cube
  • Water
  • Quark/cream-cheese/natural yogurt/cream/milk - whatever dairy you have
Finely chop your onion and apple, and shred your cabbage.  Put the lot in a pan with enough water to cover and toss in your stock cube. Simmer until the apples dissolve and then blend. Stir a tablespoon of quark/cream-cheese/yogurt/cream through, or use a good splash of milk then season to taste.
